Zucchini Fritters

Quick, easy and delicious, these protein packed zucchini fritters can be served as breakfast with smacked salmon, lunch with a side salad or as a premade healthy snack.

 

Ingredients - makes 6 fritters 

4 free range/ organic eggs

2 small zucchini

1 bunch parsley, chopped

4 spring onions, ends trimmed, thinly sliced

Sea salt

Pepper

1 lemon

½ cup almond meal or 1/3 cup rice flour

Olive oil

Smoked salmon (optional)

 

METHOD

Coarsely grate the zucchini. Place in a colander and squeeze out as much excess moisture as possible. Transfer to a bowl

Add parsley, spring onion, salt, pepper, lemon zest, eggs and almond meal. Mix well.

Heat 1 teaspoon olive oil in a non-stick frying pan over medium-high heat.

Add 2 to 3 even portions of zucchini mixture to pan.

Cook for 1-2 minutes each side or until golden and cooked through. Transfer to a plate.

Repeat with remaining olive oil and remaining zucchini mixture.

Optional - serve with 50 - 80g smoked salmon for an extra protein punch
