Raw Carrot Cake Breakfast

Oh. My. God! I have taken my carrot cake obession and turned it into a healthy breakfast. Carrots are packed with beta carotene; a powerful antioxidant that keeps our skin glowing and eyes sparkling. I cant think of a better way to get raw carrots into the diet. 

Ingredients (serves 2)

2 large organic carrots
1/2 cup rolled oats or rolled quinoa
1/2 cup walnuts
1 tbsp. raisins
Bare Blends vanilla bean protein powder
100g ricotta cheese/ natural yogurt/ coconut yogurt 


Cut carrots into quarters
Place carrots, oats, walnuts, raisins, 2 heaped tablespoons of Bare Blends protein powder and a dash of cinnamon in the Thermo mix (or food processor) and pulse on turbo until ingredients are chopped finely and evenly.
Spoon mixture into 2 bowls and set aside
In a separate bowl place 100g ricotta cheese and 1 tbsp. vanilla protein powder. Stir the protein powder evenly throughout the ricotta cheese.
Top the raw carrot mixture with vanilla protein ricotta mix and serve.

Tip: for the paleo lovers simply omit the oats and add almond meal or raw almonds and replace the ricotta with coconut yogurt.
