Black Quinoa and Vegetable Salad

Raw vegetables coupled with black quinoa results in a nutritious and delicious salad. This salad is quick, easy and provides ample nourishment. You may enjoy this salad alone or as a side dish accompanying lamb, chicken or fish. 
Ingredients (serves 4)
2 cup cooked black quinoa
4 cups of baby spinach
1 fennel bulb
1 red capsicum
1 avocado
1 to 2 handfuls of parsley
1 large lime
2 tbsp. olive oil
Sea salt and pepper
Wash all vegetables well
Finley slice fennel and capsicum, add to spinach and quinoa
Dice avocado and to salad bowl
Roughly tear parsley according to taste and add to bowl
Dress the salad with fresh lime juice, olive oil, sea salt and pepper
