Quinoa Vegetable Omelette

This meal is quick, easy and filling. I persoanlly love an omelette especially as they can slot in as breakfast, lunch or dinner. This particular omelette will not only provide the perfect balance of protein, carbs and fats it is a great way of getting vegetables into your day. 
Ingredients (serves 2)
2/3 cup quinoa flakes
1 bunch of broccolini, chopped 
Handful of snow peas, chopped
Handful of basil, torn
2/3 cup cherry tomatoes, halved
Olive oil spray
Sea salt and cracked black pepper
4 organic eggs
Place eggs and quinoa in a bowl and beat until light and fluffy, set aside
Lightly spray a non-stick frying pan with olive oil spray
Add broccolini, snow peas and tomatoes, cook over medium heat until vegetables slightly collapse, remove from pan and season with sea salt and cracked black pepper
Lightly spray pan again with a little oil, add eggs and quinoa to the pan and cook over medium heat for 2 minutes or until nearly set
Place vegetables and basil on top of the eggs and cook for further 3 minutes or until the base is golden
Carefully flip over omelette, cook for another 2 minutes
Serve immediately
