Raw Vegetable and Berry Salad

We all need to eat more raw fresh produce. This raw vegetable based salad does not only provide ample fibre, vitamins and disease protective nutrients it is also incredible crunchy and tasty. This is a balanced, bright, delicious Summer must.

Ingredients: serves 2
1 bunch of broccolini stalks, chopped
2 celery stalks, chopped
1 large carrot, pealed and chopped
1 large purple carrot, pealed and chopped
1/2 cup of blackberries or blueberries
1/2 avocado, diced
2 tbsp. pumpkin seeds
2 tbsp. pine nuts
Juice of 1 lemon
Salt and pepper
Wash vegetables and berries well before use
Place all chopped ingredients and berries into a bowl and toss 
(using a mandoline food slicer will make chopping a breeze)
Sprinkle pumpkin seeds and pine nuts over ingredients and toss
Dress the salad in fresh lemon juice and season with salt and pepper
Tip: This salad goes will with grilled fish or poached chicken breast
