Healthy Slaw

Sometimes you don’t feel like the typical salad, this is where my healthy slaw comes in handy. This easy side dish goes particularly well with grilled chicken, pork or fish.

Ingredients (serves 4 to 6)
2 pink lady apples
4 celery stalks
1 cucumber (deseeded)
1/4 cup sesame seeds
1/4 cup chopped Brazil nuts
1/4 cup slivered almonds 
100 to 200g Greek yogurt (depending on thickness of yogurt)
 Finely slice apple, celery and cucumber and place in a large bowl and toss
 Add sesame seeds, Brazil nuts, and slivered almonds and toss through
 Add Greek yogurt 50g at a time, toss through the salad until all ingredients are evenly coated
 Serve with a sprinkle of cinnamon (serves 6 as a side dish)
TIP: using the Borner V Sliver is the most efficient way to slice these ingredients
