Simple Eggs and Baby Greens

What a great way to start the day! Protein rich eggs and nourishing baby greens. Who said you can't have peas at breakfast?

 
Ingredients: serves 1
2-4 organic eggs
1/2 cup baby green peas
1 cup baby spinach
1 tbps. olive oil
Sea salt
Cracked pepper
Grated chese (optional)
 
Instructions
In a saucepan boil peas for 3 to 5 minutes
Crack eggs into a medium bowl and beat until light and fluffy
Heat frying pan with oil, place eggs and fold/ stir continuously until eggs are 80% cooked
Place spinach and cooked peas into frying pan, stir until spinach collapse and eggs are fully cooked
Serve in a bowl with grated chesse, cracked pepper and salt
