Gluten Free Pancakes

This is the perfect post training breakfast option. It contains the perfect balance of protein carobs and healthy fats. It is also the perfect guilt free pancake for those mornings you feel like a treat.
 
Ingredients (serves 1)
1/3 cup quinoa flakes
1 to 2 eggs
Cinnamon
1/2 tbsp. almond butter OR tahini (optional)
Coconut oil 
1 ripe banana (mashed)
Berries 
Natural yogurt (optional)
 
Instructions
Place eggs in a bowl and beat well
Add quinoa flakes, mashed banana and cinnamon to eggs, mix well
Heat frying pan to a high heat, add coconut oil evenly to pan
Add mixture to hot frying pan, cook pancake until golden brown (just like other pancakes)
Spread coconut oil, almond butter or tahini on top of cooked pancake
Top with fresh fruit and natural yogurt
