Red Cabbage, Pomegranate and Chicken Salad

Red cabbage and pomegranates will add texture and flavour to your everyday salads. Packed with antioxidants, red coloured produce will brighten up your plate and help you glow from the inside.
 
Ingredients (serves 1)
1/2 cup cooked quinoa
100-180g grilled chicken pieces (seasoned with your favourite herbs and spices)
Mixed baby lettuce leaves, washed
1/4 pomegranate, deseeded
Shredded red cabbage, a hand full
Sliced snow peas
1/2 cup chickpeas
Olive oil, fresh lemon juice and salt and pepper to season
 
Instructions:
Simply place all ingredients into a bowl toss well 
Drizzle with lemon juice and olive oil and season with salt and pepper
