Turkish Inspired Chicken Salad

This delicious healthy salad is packed with complex carbohydrates, protein, B vitamins and antioxidants, it doesn’t get any better really.

Ingredients (serves 2)

1 cup cooked quinoa

1/3 cup chopped coriander

2 tbsp. olive oil

Half lime finely chopped 

Chicken, 2 breast meat shredded

1/2 red onion sliced

1/3 cup chopped figs

1/4 cup flaked almonds toasted

1/2 pomegranate seeds removed

1/2 cup Greek yogurt (optional)



Cook quinoa (rice cooker works well) and set aside to cool

In a large bowl combine quinoa, coriander, oil and lime, mix well and season to taste

Add chicken, onion, figs, almonds and pomegranate seeds, toss well

Serve topped with Greek yogurt (optional)


Tip: females 80g cooked chicken (100g raw weight) males 150g cooked chicken (180g raw weight)
