Simple Eggs and Baby Greens

What a great way to start the day! Protein rich eggs and nourishing baby greens. Who said you can't have peas at breakfast?

  • 2-4 organic eggs
  • 1/2 cup baby green peas
  • 1 cup baby spinach
  • 1 tbps olive oil
  • cracked pepper
  • grated cheese optional


  • In a saucepan boil peas for 3 to 5 minutes
  • Crack eggs into a medium bowl and beat until light and fluffy
  • Heat frying pan with oil, place eggs and fold/ stir continuously until eggs are 80% cooked
  • Place spinach and cooked peas into frying pan, stir until spinach collapse and eggs are fully cooked
  • Serve in a bowl with grated chesse, cracked pepper and salt
